Crisp Bacon wrapped around pork tenderloin. Tiny medallions with big flavour, a great dinner party item.
|3 tbsp||green mustard|
|1 tbsp||each pureed ginger and garlic|
|2 tsp||smoked paprika|
|6||slices Maple Leaf Turkey Bacon|
In a small bowl mix the 1st 4 ingredients together. Brush over the tenderloin.
Begin to tightly wrap the bacon slices around the tenderloin, overlapping 1/4". As one strip of bacon finishes, tightly wrap the new piece around the end so it will not need string or toothpicks to hold it down.
Bake in a 375F for 20-30 min or until meat is no longer pink on the inside.
