Ideal for thinner sliced bacon but requires good quality maple leaf or schneiders grade.
|1 lb||beef tenderloin|
|16||Strips (1 -500gram pack) Maple Leaf bacon|
|1||Cooked Octoberfest sausage|
|1/4 tsp||Seasoning salt|
|1/2 tsp||Montreal steak spice|
|1/2 tsp||Garlic powder|
|1/2 cup||Parmesean cheese|
Take out mushrooms stems and cut around mushroom to make bowl to add stuffing.
Shred stems , excess mushroom parts and sausage with cheese grater for stuffing, chop up beef tenderloin to very small pieces, add parmesean, seasoning salt, garlic powder and steak spice, mix stuffing well
Fill mushrooms with stuffing, then wrap in bacon strips, tuck end of bacon under a previous wrap to tie up ball so no picks are required.
Bake in a non stick pan at 300 degrees for approx. an hour till bacon is golden, turn after approx 45 min,elevate one end of pan to drain grease and allow at least 10 min to cool.
