The coconut lime dip is a perfect enhancement to these tasty morsels. I used fresh pineapple but I am sure canned pineapple would work too.
1 | large boneless skinless chicken breast |
6 | slices of bacon |
12 | chunks of pineapple |
1/4 cup | mayonaise |
6 | drops of coconut extract |
4 | drops of Almond extract |
1/4 tsp | lime juice (Realime) |
1 tsp | liquid honey |
Cut the chicken into 12 equal chunks. Cut the bacon strips in half. On each strip of bacon place a pineapple chunk and piece of chicken and wrap bacon around it securely. Place on a baking sheet and bake in oven at 350F until chicken is cooked and bacon starts to brown and crisp (about 30 min).
Meanwhile for the dip- Mix mayonnaise, extracts, lime juice and honey in a small dish until smooth.
Plate and serve.
