Homemade turkey meatloaf wrapped in thick strips of crispy bacon and drizzled with a fragrant French onion pan sauce to serve.


1 tbsp (15 mL) Olive oil
2 tbsp (30 mL) Butter
2 Large onions, thinly sliced
2 Cloves garlic, minced
2 tbsp (30 mL) Balsamic vinegar
3 Sprigs thyme
2 tbsp (30 mL) Grainy mustard
1 tbsp (15 mL) Worcestershire sauce
Salt and pepper
2 lbs (1 kg) Maple Leaf Prime® Extra Lean Ground Turkey
3 Egg yolks
1 tbsp (15 mL) Chopped fresh thyme
1 tbsp (15 mL) Chopped fresh parsley
10 Slices Natural Selections™ Bacon
1 Large onion, thinly sliced
2 tbsp (30 mL) Grainy mustard
.25 cup (60 mL) White wine
.25 cup (60 mL) Chicken broth


HEAT oil and butter in a large skillet over medium. Add onions and cook, stirring frequently for 12-15 minutes or until nicely caramelized. Add balsamic vinegar, sprigs of thyme, mustard, Worcestershire and season with salt and pepper. Cook 1-2 minutes more. Remove from the heat and allow to cool slightly. Remove sprigs of thyme.

PREHEAT oven to 375°F (190°C).

GENTLY mix turkey with cooled onion mixture, egg yolks and herbs. Season with salt and pepper.

PLACE a large piece of plastic wrap on a clean work surface. Lay bacon slices one at a time so that they barely overlap. Place turkey mixture in the center of the bacon and shape into a log. Using the plastic wrap to assist, wrap the bacon up and over the log on one side then the other. The bacon ends should just touch.

ARRANGE onion slices for the sauce in the bottom of a 9 X 13 inch (3.5 L) rectangle baking dish. Stir in the mustard, wine and broth.

GENTLY lift the meatloaf and place on top of the onions, seam side down.

BAKE in preheated oven for 45 minutes to 1 hour or until the internal temperature reaches 165°F (74°C) and the bacon is nice and crisp.

SLICE and serve with pan juices and onions.
