A match made in heaven, bacon and grilled corn. Top it off with sundried tomato butter and it is just about perfect!
|3/4 cup||(175 mL) Salted butter, softened|
|1/3 cup||(80 mL) Oil packed sundried tomatoes, finely chopped|
|6||Cobs of corn with husks|
|1||Package Schneiders® Bacon|
|Salt and pepper|
MIX butter with sundried tomatoes. Form into a log and wrap in plastic wrap. Chill for at least 30 minutes in the refrigerator.
PULL the husks back from the corn and remove the silk. Soak the corn in water with the husks for 10-20 minutes. Tie the husks back away from the cob with butcher’s twine or with a few soaked husk strips.
PREHEAT BBQ to medium.
WRAP each cob of corn with 2 slices of bacon. Place on the grill and cook for 8-10 minutes or until the bacon is crisp and the corn is slightly charred and cooked tender crisp.
SLICE the flavoured butter into coins and melt onto each cob of corn prior to eating. Season with salt and pepper if desired.
