…Everything is better with Bacon! This kebab recipe gets even better when partnered with bacon!
|6||slices Maple Leaf® Bacon|
|1||lbs Maple Leaf Prime extra lean ground chicken|
|1/3 cup||(75 mL) onion, minced|
|3 tbsp||(45 mL) bread crumbs|
|2 tsp||(10 mL) garam masala|
|1 tsp||(5 mL) ginger, minced|
|1 tsp||(5 mL) garlic, minced|
|1/3 cup||(75 mL) cilantro, chopped|
|1 cup||(250 mL) cucumber, diced|
|1 cup||(250 mL) cherry tomato, halved|
|2 cups||(500 mL) lettuce, shredded|
|1 cup||(250 mL) plain greek style yogurt|
|Juice of 1 lime|
|1 tbsp||(15 mL) cumin|
|3 tbsp||(45 mL) cilantro, chopped|
PREHEAT grill to medium high heat.
HEAt a large skillet over medium high heat.
COOK bacon 3 to 4 minutes until just starting to brown. Do not allow bacon to crisp.
REMOVE onto a paper towel lined plate and keep warm.
IN a large bowl gently mix together ground chicken, onion, egg yolk, bread crumbs, garam masala, ginger and garlic.
ADD cilantro and season with salt and pepper.
DIVIDE mixture into six portions and shape into a cylindrical sausage shape.
THREAD onto 6 skewers.
ARRANGE onto a lightly oiled baking sheet and refrigerate for 30 minutes.
MEANWHILE in a small bowl combine all the ingredients for the sauce and mix well.
REFRIGERATE until ready to serve.
GRILL kofta kebabs for 15 to 17 minutes turning occasionally.
THE chicken is cooked when the kebabs are evenly char grilled and an internal temperature of 165 degrees is reached.
ALLOW to cool slightly.
CAREFULLY wrap 1 slice of softened bacon around each kebab and return to the grill for 1 to 2 minutes or until bacon is crisp.
GRILL pita for 15 seconds per side.
SERVE kebabs with vegetables, pita and yogurt sauce. Serve immediately.
Make it a full dinner meal by preparing basmati rice and serving with chutney.
