Bacon Whole Grain Pancakes

Guilty pleasure? Wholesome and guilty at the same time with the whole grains and bacon, smothered with maple syrup.

Ingredients

12 slices of bacon, precooked and cut up into chunks
1/2 cup rye flour
1 cup wholewheat flour
1/2 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 1/2 cup buttermilk
2 eggs
1 tbsp vanilla
1/4 cup butter or margarine
1 cup real maple syrup

Directions

Heat the bacon in a big pan or skillet until warm and some of the fat has been released.. Take bacon and blot on paper towels. Mix all of the dry ingredients in a large bowl. Mix the wet ingredients in a medium bowl. Pour the wet ingredients into the dry ingredients. Whisk to combine. Add in the cooked bacon pieces. Stir to combine.

In the same skillet, pour in about 3/4 cup of batter for each pancake and cook for about 2 minutes. Flip to the other side and cook for another 2 minutes. Repeat for the rest of the batter using butter or margarine to cook the pancakes. Serve with butter and lots of maple syrup.
