A delicious Bacon Turkey Chili topped with a deviled egg and your favourite fixins.
|1/2 Pkg||maple leaf bacon, chopped|
|2 lbs||ground turkey|
|3 tsp||chili powder|
|1/2 tsp||chipotle in adobo sauce|
|salt and pepper, pinch|
|1 can||diced tomatoes, 796 ml|
|1/2 cup||chicken stock|
|1 can||tomato sauce, 250 ml|
|1 can||red kidney beans, rinsed|
In a large pot add bacon and render over medium heat until cooked.
Add shallot and saute for 2 minutes. Add in your turkey and cook with bacon & shallot until no more pink remains breaking it up as you go.
Stir in cumin, chili powder, a good pinch of salt & pepper, chipotle in adobo, diced tomatoes, chicken stock and tomato sauce. Bring to a boil then reduce to a simmer.
Let flavours marry for about 30 minutes or so. Pour in your beans stirring to mix in.
Simmer another 10 minutes and then serve with your favourite fixins or put an egg on it.
