The smoky fatty flavour from the bacon helps keep this turkey nice and moist and flavourful as you roast it. And the bonus is the crispy bacon which you could eat as is or chopped up into the gravy for more flavour.


15 lbs Prime fresh turkey
1 Pkg Maple Leaf bacon
1/2 cup butter, softened


1. Clean and dry turkey with paper towels, and place in a roasting pan. Smear butter all over the skin and underneath the skin over the breasts. Place strips of bacon over the breast and another layer perpendicular on top the first layer and some over the legs if there is extra.
2. Bake covered with foil in a preheated 350 degrees Fahrenheit oven for 1 hour. Remove foil and reduce heat to 325 and roast for another hour and a half or until done at 180 degrees Fahrenheit; all the while, basting every 20 minutes.
