Peppery watercress adds zing to this salad.
|2||bunches of watercress|
|4 oz||cooked bacon|
|2 tbsp||red wine vinegar|
|2 tbsp||minced red onion|
|4 tbsp||olive oil|
|1/4 tsp||chopped fresh tyme|
|1/8 tsp||fresh ground pepper|
Mix vinegar, finely chopped onion, oil, chopped tyme and pepper, set aside.
Layer watercress, diced tomatoes and bacon on a plate. Drizzle on dressing.
Serve with your favorite sandwich or wrap.
Serves about 4 depending on size of watercress bunch.
