Quick and easy brunch option. Serve with salad or for something heartier, roasted potato wedges.
|4||slices Maple Leaf Bacon|
|4||handfuls of fresh spinach|
|4||slices of crusty white bread|
|3-4 tbsps grated mozzarella and cheddar (or cheese of choice)|
|2 tsp||dijon mustard|
|2 tbsp||real maple syrup|
Cut the bacon into small pieces. Cook for a few minutes and set aside on paper towel.
Gently wilt the spinach in a frying pan with a drizzle of olive oil and a dash of salt. Set aside.
Mix together the Dijon and maple syrup in a small bowl.
Toast the bread and then spread the Dijon maple mixture on the toast. Next layer the wilted spinach, bacon, and cheese.
Broil in oven for a couple of minutes until cheese is bubbly.
