The lightest, flufiest, and tastiest quiche ever, filled with Maple Leaf Hearty Slice Bacon
|5||Strips of Maple Leaf Hearty Slice Bacon|
|200 g||Baby spinach|
|50 g||Crumbled Feta|
|½ cup||Shredded gouda, gruyere or cheddar|
|1||Tenderflake pie shell|
|½ cup||Creme Fraiche|
PREHEAT oven to 375F
CHOP bacon into ½" strips and fry in frying pan. Remove bacon from pan once crispy, but keep the fat in the pan
DICE onions, and fry them in the fat left behind in the pan
ADD spinach to pan, and season with a touch of salt and pepper
SEPARATE egg yolks from whites, and add the crumbled feta, creme fraiche and nutmeg to the yolks and whisk everything together. Beat the egg whites until soft peaks appear. Add a quarter of the whites to the yolks, and mix. Once done, add the mixed yolk to the remaining whites, and mix together.
SPRINKLE the shredded cheese to the bottom of the crust of the pie shell. Add the spinach mixture, as well as the bacon. Top the shell off with the frothy egg mixture.
PLACE the quiche into the oven for 20-30 minutes, or until the tops are brown and pastry is firm when pushed on. Remove and serve
