Bacon pie has been a once-a-year Canada Day tradition for our family and friends. We have grown from having one pie to a minimum of four to accommodate the growing number of cottagers and hungry bellies. There are no words. This pie is legendary.
|1||large vidalia onion|
|2 cups||shredded cheddar|
Preheat oven to 375.
Prepare ingredients. Thinly slice potatoes and onions. Grate cheddar.
Wrap a round cake pan in non stick foil.
Layer bacon in pan, starting at the middle, overlapping and leaving the ends hanging off the edge. Press down.
Layer potatoes, onion and cheese, making sure the potato touches the edges. Try for two-three layers.
Overlap bacon, one at a time, wrapping the potatoes and meeting in back in the middle on the top. Press down. Try not to drool.
Place cake pan on baking sheet to catch overflow of bacon fat.
Bake for 2.5-3 hours.
Let rest (if you can) for about 10-15 minutes before slicing. Enjoy!
