Individual servings of baked pasta oozing with melted cheese, green veggies and toped with crispy bacon. Who can resist this treat?
|900 g||fusili pasta or your fave|
|250 g||smoked Maple Leaf Bacon, chopped|
|.5 cup||frozen green peas|
|250 g||shredded mozzarella|
|3 tbsp||chopped parsley|
|3 cup||tomato sauce, preferably homemade|
|2 cups||sliced mushrooms, button or cremini|
Add 1.5 tbsp of salt to a large pot 3/4 filled with water and bring to a boil.
When it boils add the short cut pasta, stir to prevent sticking. Cook for 5 min. stirring every minute. Drain and reserve 1/4 cup of cooking liquid.
Meanwhile saute bacon and mushrooms together on med. high heat until almost crisp. Add the green peas and turn the heat off. Drain any excess fat.
Add this mixture to the pasta, stir to mix. Add the remaining ingredients including salt, stir to mix. Ladle into individual 1 1/2 cup ramekins top with extra cheese. Bake for 20min in a preheated 350F oven.
