1 1/2 lbs to 2 lbs Maple Leaf Prime Turkey breast, deboned, skin removed.
1 Pkg Maple Leaf Bacon
1 cup sundried tomatoes packed in oil, drained
1/2 cup fresh basil
2 cloves garlic


Preheat oven to 375 degrees.
In a food processor pulse together tomatoes, basil and garlic until it forms a course paste. Set aside. Using a large platter form a lattice pattern with bacon. Place turkey breast over top skin side down. Spread tomato mixture onto the butterflied turkey breast. Pull sides of bacon up tightly, trussing with butchers twine if needed. Using a parchment lined baking sheet invert turkey onto tray so lattice work is face side up. Bake in oven for 45 to 50 minutes and bacon is golden brown or internal temperature of 165 degrees is reached. Allow to cool for 5 to 10 minutes before slicing.


Serve with roasted potatoes and green beans.
