These are a lovely addition to a dinner or a Sunday brunch. A great use for leftover mashed potatoes. Serve with sour cream.


2 cups mashed potatoes
2 eggs
2 tbsp sour cream
6 slices bacon
1/4 cup sour cream


In a skillet fry the bacon until cooked but not crisp. Remove, cut bacon slices into 3 pieces and set aside. Pour off excess grease. Leave enough in the pan to fry the latkes.

Mix potatoes, sour cream and eggs in a mixing bowl. Heat skillet on medium and spoon the potato mixture into the pan divided into 6 equal sized pancakes. Press the pieces of bacon into the top side of the pancakes. Cook until the edges are bubbling and start to dry slightly (about 5-6 min). They should be brown when you flip over and cook for another 3-4 min. Turn out onto plates with bacon side up. Serve with sour cream.
