Hashbrowns, eggs and bacon in one equals a great breakfast.

Ingredients

1 Pkg Bacon
1 Pkg Hashbrowns
8 eggs
1/4 cup milk
2 tbsp parsley
1 tsp salt
2 tsp pepper
2 cup shredded cheddar
1/2 cup onion

Directions

1. In 12-inch skillet, cook bacon until crisp. Chop
2. Drain drippings, reserving 1-2 tablespoon in the pan. Add onion and fry until soft (transluscent).
3. In a bowl, mix eggs, milk, salt, pepper, and parsley. Add to the pan and cook (keeping eggs soft).
4. Bake hashbrowns in the oven as directed until crisp.
4. In a 9 x 11, greased pan. pour layer cooked hashbrowns, chopped bacon, and egg mixture.
5. Top with cheese and return to the oven for 15 minutes at 350.
6. Enjoy
