|8||Slices Maple Leaf® Bacon, diced|
|0.5 cup||Chopped onion|
|1/2 cup||(125 mL) Chopped green pepper|
|1||(10 oz/284 mL) Can mushroom pieces, drained|
|3 tbsp||(45 mL) Soy sauce|
|3 cups||(750 mL) Cooked rice|
HEAT a large skillet over medium-high heat. Add bacon and fry until crisp. Using a slotted spoon, remove from the pan. Discard all but 2-3 tbsp (30-45 mL) of the bacon drippings; add onion and green pepper and cook stirring occasionally until soft and fragrant. Stir in mushrooms, soy sauce and rice. Add bacon bits back to the pan. Toss all of the ingredients together and allow to heat through.
