The perfect sharing breakfast! This fry dish can be served up in less than 20 minutes and makes the best family brunch!
|8||Slices Maple Leaf® Bacon, diced|
|4||Medium potatoes, cooked and diced|
|1 tbsp||Chopped onion|
|Salt and pepper|
|1/2 cup||Firmly packed grated cheddar cheese|
Heat a large skillet over medium-high. Add diced bacon and fry until crisp. Drain all but 2 tbsp (30 mL) of the bacon drippings from the pan. Add potatoes and onion. Toss gently to coat and season with salt and pepper to taste. Cook until lightly browned. Reduce the heat to low. Stir in half the cheese. Break eggs into the mixture and gently stir until eggs are set. Sprinkle with the remaining cheese. Remove from heat when cheese has melted and serve.
