I LOVE Dry Ribs, but when I make them in the oven (as opposed to deep-frying), I always find them a little dry and less flavourful. The addition of bacon has made all the difference. Use your favourite sauce to toss them in (honey garlic, buffalo, or buffalo ranch). YUM!

Ingredients

1 cup Bacon (crumbled)
2 lb Pork, chopped into 1-inch cubes
2 cups panko flakes (Japanese breadcrumbs))
1 egg
1 tsp salt
1 tsp pepper
1 cup Sauce (your favourite flavours)

Directions

1. Fry bacon until crisp.
2. Crumble into very small pieces.
3. Mix panko flakes, salt, pepper, and crumbled bacon.
4. In a separate bowl, beat the egg.
5. Take the pork cubes, dip in egg mixture, and then in breadcrumbs/ bacon mixture. You may have to do this twice for even coverage.
6. Place on a lightly greased cookie sheet and bake at 375 for 40-45 minutes.
7. Toss in your favourite sauce and enjoy.
