A great tasting breakfast featuring scrambled eggs, filled with bacon bits, and served with a side of bacon as well.
|2||Strips of Maple Leaf Bacon|
|½ tbsp||Mascarpone cheese|
|1 tbsp||Shredded gouda|
CUT bacon strips into small piece, and fry it in a small sauce pan until crispy. Once done, let pan cool down to room temperature, with the bacon and bacon fat inside
ADD the half tablespoon of butter and 3 eggs (whole). On medium high heat, start stirring the eggs together, until eggs begin to come together, at which point, remove from heat, but keep stirring. Continue stirring until the eggs are firm.
ADD in the mascarpone and gouda. Mix everything together until it is super fluffy
REMOVE from pan, and plate it with a side of bacon, buttered toast and tomato slices.
