Yummy cheesy chicken breasts with bacon, there's nothing like coming home to a meal like that!
|2||Maple Leaf Prime Naturally® Raised Without Antibiotics Chicken Breasts|
|2 oz||(50 g) Cheddar cheese, cut into ½” (1 cm) cubes|
|3||Maple Leaf® Ready Crisp® Bacon Strips, chopped|
|Salt and pepper|
|2 tbsp||(30 mL) Vegetable oil|
|1/4 cup||(60 mL) Ready prepared salsa|
|2 tbsp||(30 mL) Crumbled tortilla chips (optional)|
PREHEAT oven to 375°F (190°C).
USING a sharp knife cut a slit in the side of each chicken breast to form a pocket. Mix the cheese and bacon together and divide between the two chicken breasts. Stuff the mixture into the pocket and secure closed with a wooden toothpick. Season the chicken with salt and pepper.
HEAT oil over medium-high heat in a medium skillet. Add chicken and sear on each side for 1-2 minutes or until golden brown. Transfer to an ovenproof baking dish and bake in preheated oven for 18-20 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
REMOVE toothpicks and serve each chicken breast topped with a spoonful of salsa and crumbled tortilla chips if using.
