6 Slices Maple Leaf® Bacon, finely chopped
2 Large white potatoes, peeled and quartered
2 Sweet potatoes, peeled and quartered
1 cup (250 mL) Milk or cream
1/4 cup (60 mL) Butter
1/2 cup (125 mL) Grated white Cheddar cheese
1/4 cup (60 mL) Chopped chives
1/4 cup (60 mL) Sour cream


HEAT a large skillet over medium-high. Add bacon and cook, stirring occasionally for 8-10 minutes or until nice and crispy. Remove from the pan using a slotted spoon and transfer to a paper towel lined plate. Set aside.

COOK potatoes and sweet potatoes in a large pot of salted water until fork tender. Drain and return the potatoes to the same pot.

HEAT milk or cream and butter in a small saucepan to a simmer. Pour over the potatoes. Mash the potatoes using a hand held electric mixer. Beat until fluffy. Stir in bacon, grated cheese and chives, reserving some for garnish. Season to taste with salt. Serve with a dollop of sour cream and sprinkling of chives.
