|6||Slices Maple Leaf® Bacon, finely chopped|
|2||Large white potatoes, peeled and quartered|
|2||Sweet potatoes, peeled and quartered|
|1 cup||(250 mL) Milk or cream|
|1/4 cup||(60 mL) Butter|
|1/2 cup||(125 mL) Grated white Cheddar cheese|
|1/4 cup||(60 mL) Chopped chives|
|1/4 cup||(60 mL) Sour cream|
HEAT a large skillet over medium-high. Add bacon and cook, stirring occasionally for 8-10 minutes or until nice and crispy. Remove from the pan using a slotted spoon and transfer to a paper towel lined plate. Set aside.
COOK potatoes and sweet potatoes in a large pot of salted water until fork tender. Drain and return the potatoes to the same pot.
HEAT milk or cream and butter in a small saucepan to a simmer. Pour over the potatoes. Mash the potatoes using a hand held electric mixer. Beat until fluffy. Stir in bacon, grated cheese and chives, reserving some for garnish. Season to taste with salt. Serve with a dollop of sour cream and sprinkling of chives.
