I am going to a beer tasting party today so I was inspired to create this bacon hero to pair with beers.
|2 1/2 cup||flour|
|1/2 cup||corn meal|
|5 tsp||baking powder|
|2 tbsp||crumpled bacon|
|1/2||onion chopped and sauteed|
|1||bottle or can of beer|
|1 cup||grated cheddar|
In a skillet cook the bacon to just pre crisp. Cut into thirds.
Combine, flour, cornmeal, baking powder, salt, sugar parmesan and bacon bits in a bowl. Add beer and egg and mix quickly until all moistened, gently and quickly fold in onions and 1/2 of the cheese. spoon evenly into 12 muffin tins (sprayed with cooking spray). Press the pieces of bacon into the tops.
Bake at 350 for 15-20 min, until top springs back.
Sprinkle tops with the remaining cheese and return to the oven for 3 min (when cheese starts to bubble.
