6 slices Schneiders® Bacon, chopped
1 Onion, thinly sliced
8 cups (2 L) Red cabbage, thinly sliced
2 tbsp (30 mL) Dijon mustard
2 tbsp (30 mL) Brown sugar
1/4 cup (80 mL) Apple cider vinegar
1 cup (250 mL) Chicken broth
Salt and pepper


COOK bacon over medium heat in a large pot or Dutch oven until crisp, about 8-10 minutes. Add onions and cabbage. Toss to coat. Stir in remaining ingredients, season with salt and pepper. Bring to simmer and cook, covered for 45 minutes stirring occasionally. Add more water or broth if mixture becomes too dry.
