Bacon Bean Sprouts Stir Fry

This dish has lots of crunchy texture with the crispy bacon and the crunchy bean sprouts in every bite.

Ingredients

12 Strips of bacon, cut into thirds
6 cup fresh bean sprouts, washed and rinsed
1/2 yellow bell pepper, sliced
2 celery ribs, thinly sliced
1 small carrot, thinkly sliced
2 tbsp soy sauce
3 slices of fresh ginger
1/4 cup fresh cilantro, chopped

Directions

Prepare all of the ingredients and have on hand. In a deep skillet, place bacon and heat on medium flipping over until the bacon is crispy for about 4 minutes. Reserve and blot bacon on paper towels. Drain fat leaving about 2 tbsp. left in skillet. On same heat, toss in ginger and carrots and stir fry for about 2 minutes. Toss in pepper and celery and stir fry for another 2 minutes. Add in bean sprouts and toss gently to mix well for about 3 minutes. Sprinkle in soy sauce and cilantro and stir fry for about a minute. Toss in cooked bacon to mix with vegetables and serve.
