This elegant dish features fresh bacon and tomato tortellini tossed in a creamy rose sauce.
|1||Small onion, chopped|
|1 tbsp||(15 mL) Olive oil|
|2||Cloves garlic, minced|
|2||Roma tomatoes, chopped|
|1 tsp||(5 mL) Red pepper flakes|
|1||(600 mL) Container Olivieri® Rosé Sauce|
|1||(700 g) Package Olivieri® Three Cheese Tortellini|
|1||(85 g) Package Maple Leaf® Natural Selections® Bacon Pieces|
|¼ cup||(60 mL) Freshly grated Parmesan cheese, divided|
|¼ cup||(60 mL) Freshly chopped basil, divided|
COOK pasta according to package directions. Drain, reserving ½ cup (125 mL) of pasta water and set aside.
HEAT olive oil over medium-high heat, add onion and sauté for 1-2 minutes. Add garlic, tomatoes and red pepper flakes and continue to cook for 1-2 minutes. Pour in rosé sauce and bring to a simmer. Add tortellini and bacon pieces; toss to coat. Remove from the heat and stir in half the Parmesan cheese and basil. Spoon onto a serving platter and sprinkle with the remaining cheese and basil.
