This simple and savoury pie is a great lunch or dinner option. With tomatoes, bacon and cheese it is a dish that will be enjoyed by all.


1 Tenderflake® Frozen Deep Dish Pie Shell
5 Roma tomatoes, sliced
½ Sweet onion, thinly sliced
.25 cup (60 mL) Chopped fresh basil
Salt and pepper
.25 cup (60 mL) Chopped cooked Maple Leaf® Bacon, divided
1 cup (250 mL) Grated White Cheddar cheese
1 cup (250 mL) Grated Mozzarella cheese
.75 cup (175 mL) Mayonnaise


BAKE pie shell according to package directions. Set aside.

PREHEAT oven to 375°F (190°C).

SPREAD tomatoes on a baking sheet lined with paper towel. Sprinkle with salt and let stand for 10-15 minutes to remove excess moisture.

LAYER tomato slices, onion and basil in the baked pie shell. Season with salt and pepper. Reserve enough tomato slices for the top and set aside.

MIX together 2 tbsp (30 mL) bacon, cheese and mayonnaise. Spread on top of the tomato, onions and basil. Top with reserved tomatoes and sprinkle with remaining bacon.

BAKE in preheated oven for 45 minutes or until lightly browned.


Serve as a side to BBQ meats or with a salad on it’s own.
