A deliciously different way to eat green beans. Classic flavours of bacon and tomato added to crispy fresh green beans.
|1 lb||(450 g) Green beans|
|8||Slices Schneiders® Bacon, diced|
|2||Large tomatoes, diced|
|.25 cup||(60 mL) Chopped fresh parsley|
|1 tbsp||(15 mL) Grainy mustard|
|1 tsp||(5 mL) Sugar|
|2 tbsp||(30 mL) Fresh lemon juice|
|.25 cup||(60 mL) Olive oil|
|Salt and pepper|
BRING a large pot of salted water to a boil. Add green beans and cook 3 minutes. Plunge into ice water to stop cooking. Drain and set aside in a large bowl.
COOK bacon in a large skillet over medium heat until crispy. Drain on paper towels.
ADD bacon, onion, tomatoes and parsley to green beans.
WHISK together dressing ingredients and pour over green bean mixture. Season with salt and pepper. Serve at room temperature.
