A refreshing and flavourful salad that is a perfect complement to almost any main course and a great start to any meal.


.5 California Goldminer® Sourdough Large Boule, cut into bite sized cubes
125 ml Olive oil
2 tbsp (10 mL) Italian seasoning
2 ml Salt
1 ml Pepper
16 oz grape tomatoes, halved
1 Yellow pepper, chopped
1 English cucumber, diced
1 lb (454 g) Bacon, chopped and cooked
60 ml Chopped fresh parsley
1 Avocado, diced
3 tbsp (45 mL) Chopped fresh basil
60 ml White balsamic vinegar
1 tbsp Dijon mustard
125 ml Olive oil
Salt and pepper


PREHEAT oven to 375°F (190°C).

TOSS bread cubes, olive oil, Italian seasoning, salt and pepper in a large bowl. Arrange the seasoned cubes on a baking tray and bake for 15-20 minutes or until just crisp and golden brown. Remove from the oven and cool slightly.

ADD tomatoes, pepper, cucumber, bacon and parsley to the bread cubes.

WHISK together the ingredients for vinaigrette and drizzle liberally over the salad ingredients. Let stand for 10-15 minutes to allow the flavours to combine. Garnish with diced avocado and fresh basil just before serving.
