Ingredients

1 (10 oz/300 g) Package fresh spinach, washed
8 Slices Maple Leaf® Bacon
1 Red onion, thinly sliced
1/2 lb (225 g) Fresh mushrooms, sliced
2 Hard-cooked eggs, chopped
DRESSING:
1/4 cup (60 mL) Vegetable oil
2 tbsp (30 mL) Vinegar
1 Clove garlic, minced
1/2 tsp (2 mL) Salt
1/4 tsp (1 mL) Pepper
Pinch of sugar

Directions

TEAR spinach into bite-sized pieces. In a medium skillet, cook bacon until crisp. Drain and crumble. Toss bacon and spinach together with onion rings, mushroom slices and chopped egg.

WHISK together all of the ingredients for dressing. Just prior to serving, drizzle over salad, toss and serve.
