Delicious lobster cake recipe, with the added touch of bacon.


2 lb Lobster
6 Strips of Maple Leaf Bacon
½ cup Crushed Crackers
1 Egg
½ tsp Old Bay
¼ tsp Worchestershire
2 tbsp Hellmann's Mayo
2 Scallion
1 tbsp Dijon Mustard
2 Dashes of Tabasco


PULSE strips of bacon in a food processor until its really fine then give it a good frying on the stove

REMOVE bacon onto a paper towel, but keep the fat

SHELL the lobster meat, tear it, and mix it with the bacon.

ADD crushed crackers, egg, Old Bay, Worchestershire, Mayo, Scallion, Mustard and Tabasco Sauce and mix it altogether. Form the mix into 6-8 patties and set aside

WHISK egg yolk, lemon juice and dijon in a metal bowl. Drizzle in the bacon fat and whisk vigorously.

SEASON the mix with Old Bay and add garlic

FRY the cakes over medium heat, in a little bit of vegetable oil for 4-5 minutes per side

TOP with some parsley, a little aioli and a touch of cayenne, and serve

Aioli Mix:
1 Egg Yolk
Rendered fat from 6 strips of bacon
Vegetable oil to make 1/2 cup of fat
2 cloves of Garlic
1 tsp Old Bay Seasoning
2 tsp Lemon Juice
1 tsp Dijon Mustard
