These potato rounds are delicious! I paired them with a ranch dip and it was so good!
|10||strips of Maple Leaf Bacon|
|4 cups||grated cheese|
|null||salt and pepper|
|drizzle||of canola oil|
Cook bacon and set aside, crumble, when cooled. Grate 4 cups of cheese. Wash potatoes and cut into thick slices (I left the skins on) and add to a pot with enough water to cover potatoes. Bring to a boil, reduce heat and continue boiling for about 5 minutes. Preheat oven to 375 degrees. Drain potatoes and and overlap on a baking sheet. Drizzle with oil, season with salt and pepper, cover with cheese and bacon. Bake for 15-20 minutes. Serve with ranch dressing and enjoy!
