You know that one dish that is your absolute comfort food from when you were a kid. The one you wanted to eat every day and still do when you need a pick-me-up. This is mine, and when I have it, it still can take me back.
Your kids will love it, but if you want to dress it up for a party, use slices of French bread stick and serve small ones as an appetizer. Your guests will love it too.

In a skillet fry the bacon to about 1/2 done. You don't want it to be crispy. remove from the pan and cut into 3 pieces.
Place the cheddar slices onto the bread and place on a baking sheet. Arrange the partially cooked bacon on top.
Place in the oven on broil until the bacon cooks and cheese bubbles (about 4-5 min).
You could add mushrooms or sautéed onions to dress these up if you like, but ultimately I like them best just like this.
