4 | Dempster’s® Everything Bagels, cut into bite sized pieces |
12 | slices Maple Leaf® Bacon, chopped |
1 | Large onion, chopped |
1 | Stalk celery, chopped |
3 cups | (750 mL) Reduced sodium chicken broth |
2 | Eggs |
1/2 tsp | (2 mL) Salt |
1/4 tsp | (1 mL) Pepper |
1/4 cup | (60 mL) Chopped fresh herbs (sage, parsley, thyme) |
PREHEAT oven to 375°F (190°C).
LIGHTLY grease an oven proof-baking dish with butter or cooking spray.
SPREAD the bagel pieces on a large rimmed baking sheet and toast in the preheated oven for about 15 minutes. Set aside to cool.
MEANWHILE, cook bacon over medium-high, stirring occasionally until crisp, about 8 minutes. Remove from the pan using a slotted spoon and drain on a paper towel lined plate. Add onions and celery to the pan with the bacon drippings, cook until soft, about 5-6 minutes.
WHISK together the broth, eggs, salt and pepper in a large bowl. Add bagel pieces, bacon, onion, celery and fresh herbs. Mix well and let stand for 10-15 minutes. Transfer to the baking dish and bake in the preheated oven for 45 minutes or until crisp and golden on top.
