|4||Dempster’s® Everything Bagels, cut into bite sized pieces|
|12||slices Maple Leaf® Bacon, chopped|
|1||Large onion, chopped|
|1||Stalk celery, chopped|
|3 cups||(750 mL) Reduced sodium chicken broth|
|1/2 tsp||(2 mL) Salt|
|1/4 tsp||(1 mL) Pepper|
|1/4 cup||(60 mL) Chopped fresh herbs (sage, parsley, thyme)|
PREHEAT oven to 375°F (190°C).
LIGHTLY grease an oven proof-baking dish with butter or cooking spray.
SPREAD the bagel pieces on a large rimmed baking sheet and toast in the preheated oven for about 15 minutes. Set aside to cool.
MEANWHILE, cook bacon over medium-high, stirring occasionally until crisp, about 8 minutes. Remove from the pan using a slotted spoon and drain on a paper towel lined plate. Add onions and celery to the pan with the bacon drippings, cook until soft, about 5-6 minutes.
WHISK together the broth, eggs, salt and pepper in a large bowl. Add bagel pieces, bacon, onion, celery and fresh herbs. Mix well and let stand for 10-15 minutes. Transfer to the baking dish and bake in the preheated oven for 45 minutes or until crisp and golden on top.
