This fun to make sandwich is even more delicious than it looks.
|4||Slices Dempster's Bakery Gluten Zero™ White Bread|
|4 tsp||(20 mL) Softened butter|
|1/3 cup||(80 mL) Baby spinach or arugula|
|4||Slices bacon, cooked and halved|
SPREAD each slice of bread with butter. Arrange in a lightly greased skillet set over medium heat. Using a 1 ½” (4 cm) round cookie cutter, cut a hole in two of the slices of bread. Remove the center and discard.
SET the egg yolk inside the hole in the bread. Cook for about 1 minute per side. Remove from the pan.
ASSEMBLE sandwich by layering spinach or arugula on toasted bread slices followed by tomato. Season with salt and pepper. Arrange avocado slices over top, then bacon slices and the toasted bread with the egg yolk. Serve immediately.
