Quick and simple, this pasta dish kicks-up the flavour with crisp bacon and ripe tomatoes.
|1 lb||(450 g) Spaghetti|
|12||Slices Maple Leaf® Bacon, cut into small strips|
|3 cups||(750 mL) Diced fresh tomatoes|
|2||Cloves garlic, peeled and finely chopped|
|2 tbsp||(30 mL) Fresh basil for garnish|
|Salt and pepper|
|Fresh Parmesan cheese, shaved|
COOK spaghetti according to package instructions. Drain and toss with olive oil to prevent sticking. Set aside.
FRY bacon strips in a large skillet over medium heat until crispy. Drain off some of the bacon fat and return to heat. Add diced tomatoes and garlic. Stir to warm through. Add spaghetti, basil, salt and pepper. Toss to combine.
TRANSFER to a large platter or serving bowls and top with shaved Parmesan cheese. Serve immediately.
Substitute diced tomatoes and basil with prepared bruschetta mix.
Serve with a side salad and Dempster’s® Ovenfresh™ Baguette.
