|1 Pkg||of Maple Leaf® Ready Crisp Bacon pieces|
|1 cup||(250 ml) crunchy peanut butter|
|3||bananas, peeled and thinly sliced|
|2 tbsp||(30 ml) honey|
|3/4 cup||(110 g) pecan nuts or nut of choice, roughly chopped|
|16||slices good-quality sliced white bread|
|1 1/2 cups||(350 ml)homogenized milk|
|2 tbsp||(30 ml) unsalted butter|
|1 tbsp||(15 ml) icing sugar|
|1||small tub Greek-style natural yoghurt|
In a bowl mix together the bananas, bacon, nuts and honey.
Spread the peanut butter evenly on four pieces of bread. On the other four pieces of bread, divide the banana bacon mixture evenly. Combine the 2 pieces of bread to form a sandwich.
Heat a non-stick pan over medium heat.
Crack the eggs into a bowl and beat in the milk. Dip both sides of the bacon banana sandwiches in the egg mixture. Melt the butter in the frying pan. Fry each sandwich gently for 3 to 4 minutes, turning halfway through cooking, until nicely golden brown and warmed through.
Dust with the icing sugar, cut in half and serve with the Greek-style natural yoghurt.
Try using alternative nut butters like soy butter for school lunches.
