Ingredients

Roasted Pepper Dressing:
1 cup (240 ml) olive oil
1/2 cup (120 ml) roasted peppers
1/4 cup (60 ml) pinenuts, toasted
2 cloves garlic
1 tsp (5 ml) capers
2 tbsp (30 ml) lemon juice
Salad:
1 Pkg Maple Leaf® Ready Crisp Bacon Pieces
2 cups orzo, cooked
1 cup (240 ml) goat cheese, crumbled
3/4 cup (180 ml) artichokes, chopped
2 tbsp (30 ml) basil, chopped

Directions

For the dressing;
In a food processor, add all the ingredients and puree until smooth. Season with salt and pepper to taste.

In a large bowl add all of the ingredients (reserve some basil, goat cheese and pinenuts for garnish), mix together well. Season with salt and pepper.
