Succulent, light, crispy and wrapped in bacon-- need we say more?
|1||Maple Leaf Prime Naturally® Boneless, Skinless Turkey Breast|
|Salt and pepper|
|1 tbsp||(15 mL) Dijon mustard|
|1 tbsp||(15 mL) Grainy mustard|
|1 tbsp||(15 mL) Pure maple syrup|
|2 tbsp||(30 mL) Chopped fresh herbs (thyme, rosemary, sage)|
|2||Cloves garlic, minced|
|6||Slices Maple Leaf® Natural Selections® Bacon|
|2||Large onions, thinly sliced|
|1/2 cup||(125 mL) Water or chicken broth|
PREHEAT oven to 375˚F (190˚C).
PLACE turkey breast on a clean cutting board. Cover with a large piece of plastic wrap. Using a meat mallet or a heavy pot pound turkey breast to ½ inch (1 cm) thickness. Remove plastic wrap and season with salt and pepper.
MIX together Dijon, grainy mustard, maple syrup, herbs and garlic.
SPREAD mixture over the inside of the turkey breast. Gently roll up the turkey breast to enclose the mustard mixture.
LAY bacon slices on a cutting board so that they are side by side, just barely overlapping. Place turkey roll in the center of the bacon strips and wrap bacon around the turkey.
PLACE sliced onion in the bottom of a small roasting pan or baking dish. Place the bacon wrapped turkey on top with the bacon ends next to onions. Pour water over onions.
ROAST in preheated oven for about 1 hour or until the bacon is crisp and the internal temperature of the turkey has reached 165°F (74°C). Remove from the oven and let rest 10 minutes before slicing. Season the onion mixture with salt and pepper. Serve turkey sliced and spoon onion pan juices over top.
