Delectable as an appetizer or side, these little cheesy tomatoes are sure to be the hit of any cocktail party.
|6||Slices Schneiders® Bacon, cooked, finely chopped|
|1/2 cup||(125 mL) Mayonnaise|
|1/4 cup||(60 mL) Finely grated Cheddar cheese|
|2 tbsp||(30 mL) Freshly grated Parmesan cheese|
|2 tbsp||(30 mL) Chopped chives|
|Salt and pepper|
|2 cups||(500 mL) Shredded kale|
REMOVE the tops from the tomatoes using a sharp paring knife. Scoop out the centers using the small end of a teaspoon or measuring spoon. Set upside down on a paper towel and set aside.
MIX together bacon, mayonnaise, Cheddar, Parmesan and chives. Season with salt and pepper.
SPREAD the shredded kale onto a serving plate or small platter.
SPOON bacon mixture into a piping bag fitted with a ¼ inch (5 mm) tip. Pipe the mixture into the tomatoes, slightly over filling. Set the filled tomatoes on the bed of kale and chill until ready to serve.
If you do not have a piping bag and tip, use a small spoon to fill tomato cavities
