Choucroute is usually a slow cooking meal. But, with the addition of bacon this is a great satisfying savoury side. Say that 3 times fast!
|1/2||head of cabbage, chopped thin|
|250 g||smoked Maple Leaf Bacon, chopped|
|1||large onion, chopped|
|3||cloves garlic, chopped|
|1 tbsp||thyme, dry or fresh|
Bring the cabbage to boil in a large pot of boiling water. Cook for 15 min to soften. Drain, set aside
In the same pot add the bacon and cook on med. high heat to crisp. Add the the onion after the bacon has sweated some of it's oil.
When the bacon is crisp remove with a slotted spoon to a small dish.
Add the cabbage to the bacon oil. Cook for 15 min. stirring to coat and slightly caramelize. When the cabbage is completely softened add the herbs and bacon. Stir to mix.
