Easiest soup you'll ever make that tastes great and is great for you...not to mention the hidden bacon flavour that will leave you wanting more. My family loves this soup!
|3||Bacon Strips (Maple Leaf preferably)|
|1/2||Medium Sized Red Onion|
|2 cups||Low Sodium Chicken Broth|
|Sour Cream to Taste (to Finish)|
|Salt and Pepper to Taste|
Cut up butternut squash and red onion into small cubes and roast in oven on roasting tray at 350 degrees until slightly softened and browned. Brown three strips of bacon until crispy. Place squash, onion and bacon in blender with chicken broth until smooth. Transfer mixture from blender to saucepan and bring to a boil, adding salt and pepper taste. Serve with a dollop of sour cream.
