This delicious chicken salad is healthy and versatile. For a festive brunch, serve in half papaya cups for extra nutrition and taste.
|1 Pkg||150 g. Maple Leaf Natural Selections Strips, Oven Roasted Chicken|
|1||ripe avocado, peeled and with pit removed|
|.5||large lemon, juiced|
|.25 cup||diced red onion|
|.25 cup||finely chopped parsley|
|1 tbsp||chopped fresh mint for garnish|
|4||ripe, small papayas, cut in half, seeds removed|
|salt and pepper, to taste|
dice the chicken strips into cubes
dice the avocado into small pieces
add the chicken, avocado, diced onion, parsley, lemon juice, salt and pepper and mix together until the soft avocado coats the other ingredients.
place the chicken avocado salad into the papaya halves.
Garnish with mint and serve.
