Creamy avocado, sour lime, sweet mango, and succulent pulled pork come together in this quesadilla to make it the best lunch of all time!

Ingredients

CILANTRO-LIME COLESLAW:
2 cups (500 mL) Red cabbage, finely sliced
2 cups (500 mL) Green cabbage, finely sliced
1 Carrot, grated
2 Green onions, sliced
1/4 cup (60 mL) Mayonnaise
1/4 cup (60 mL) Sour cream
1 tbsp (15 mL) Lime juice
1 tsp (5 mL) Lime zest
2 tbsp (30 mL) Chopped cilantro
Salt and pepper
QUESADILLA:
6 Dempster’s® Original Small Tortillas
2 1/2 cups (625 mL) Pulled pork
1 cup (250 mL) Fresh Chef BBQ Sauce (recipe below)
1 cup (250 mL) Grated Pepperjack cheese
1 cup (250 mL) Grated Cheddar cheese
2 Avocados, sliced
2 Mangoes, sliced
1 tbsp (15 mL) Olive oil
FRESH CHEF BBQ SAUCE:
2 cups (500 mL) Ketchup
1/2 Onion, finely chopped
1 Clove garlic, minced
1/2 cup (125 mL) Prepared mustard
2 tbsp (30 mL) Vinegar
2 tbsp (30 mL) Brown sugar
2 tbsp (30 mL) Molasses
1/2 tsp (2 mL) Allspice
1-2 Chipotles in adobo sauce, chopped
Salt and pepper
Hot sauce to taste

Directions

CILANTRO-LIME COLESLAW:
PLACE cabbage, carrots and onion in a medium bowl. In a small bowl whisk together the remaining ingredients then toss with cabbage mixture.

QUESADILLA:
COMBINE 1 cup (250 mL) of the BBQ sauce with the pulled pork in a pot. Heat until warmed through.

HEAT a large skillet to medium-high. Lay tortillas on a clean work surface. Divide the pork mixture equally between the tortillas, over one half and top with cheeses. Fold in half and lightly brush both sides with oil. In a large skillet, over medium heat, grill until crisp, golden brown and cheese has melted. Remove from skillet and place sliced avocado and mango inside the quesadilla. Serve alongside the coleslaw.

FRESH CHEF BBQ SAUCE:
COOK onions in a small saucepan until soft. Add remaining ingredients and simmer for 10-15 minutes.

Notes

Store remaining BBQ sauce in an airtight container and refrigerate to use on any grilled meats.
