|3||Hard-boiled eggs, peeled and chopped|
|1 tbsp||(15 mL) Light mayonnaise or whipped salad dressing|
|Dash of hot sauce (optional)|
|Salt and pepper|
|4||Slices Dempster’s WholeGrains® Canadian Century Grains Bread|
|½ cup||(125 mL) Baby arugula|
MIX chopped eggs, mayonnaise (or whipped salad dressing), hot sauce (if using), avocado, salt and pepper in a small bowl.
DIVIDE the egg salad between two slices of bread. Top each with tomato slices and arugula. Season with salt and pepper and top with remaining slices of bread.
