This Olivieri® Fresh Linguine and Asparagus pasta dish is delicious enough to serve on its own or as a side!
|1||(350 g) Package OLIVIERI® Fresh Linguine Pasta|
|12||Stalks fresh asparagus, cut into 1-inch (2.5 cm) pieces|
|½ cup||(125 mL) Red onion, thinly sliced|
|1||Red pepper, thinly sliced|
|½ cup||(125 mL) Chicken broth|
|3 tbsp||(45 mL) OLIVIERI® Olive Oil and Garlic Pesto|
|¼ cup||(50 mL) Grated Parmesan cheese|
COOK pasta in a large pot of boiling salted water for 3 minutes. Meanwhile, heat oil over medium-high in a medium skillet.
ADD vegetables and sauté for 2 to 3 minutes. Add broth and pesto.
COMBINE drained pasta with vegetable mixture and sprinkle with parmesan cheese.
