Delicious, fresh, crunchy chicken salad. It’s easy and it’s healthy!
|1/3 cup||(175 mL) Pumpkin seeds|
|1||Large head iceberg lettuce, shredded|
|1/2 cup||(125 mL) Chopped mint leaves|
|1||(400 g) Package Maple Leaf Prime Naturally® Fully Cooked Chicken Strips|
|1 cup||(250 mL) Matchstick carrots|
|1 cup||(250 mL) Bean sprouts|
|1/2 cup||(125 mL) Thinly sliced cucumbers|
|1/2 cup||(125 mL) Thinly sliced radishes|
|3/4 cup||(175 mL) Crumbled Feta cheese (optional)|
|Sesame vinaigrette for serving|
HEAT a small skillet over medium-high. Add pumpkin seeds and cook for 2-3 minutes or until lightly toasted. Set aside to cool.
ASSEMBLE salad by tossing lettuce and mint together in a large salad bowl. Arrange chicken, carrots, bean sprouts, cucumbers, radishes, Feta cheese (if using) and pumpkin seeds artfully over top. Drizzle with sesame vinaigrette; toss and enjoy!
Substitute chopped peanuts for toasted pumpkin seeds.
