Delicious, fresh, crunchy chicken salad. It’s easy and it’s healthy!
1/3 cup | (175 mL) Pumpkin seeds |
1 | Large head iceberg lettuce, shredded |
1/2 cup | (125 mL) Chopped mint leaves |
1 | (400 g) Package Maple Leaf Prime Naturally® Fully Cooked Chicken Strips |
1 cup | (250 mL) Matchstick carrots |
1 cup | (250 mL) Bean sprouts |
1/2 cup | (125 mL) Thinly sliced cucumbers |
1/2 cup | (125 mL) Thinly sliced radishes |
3/4 cup | (175 mL) Crumbled Feta cheese (optional) |
Sesame vinaigrette for serving |
HEAT a small skillet over medium-high. Add pumpkin seeds and cook for 2-3 minutes or until lightly toasted. Set aside to cool.
ASSEMBLE salad by tossing lettuce and mint together in a large salad bowl. Arrange chicken, carrots, bean sprouts, cucumbers, radishes, Feta cheese (if using) and pumpkin seeds artfully over top. Drizzle with sesame vinaigrette; toss and enjoy!
Substitute chopped peanuts for toasted pumpkin seeds.
