Delicious, fresh, crunchy chicken salad. It’s easy and it’s healthy!


1/3 cup (175 mL) Pumpkin seeds
1 Large head iceberg lettuce, shredded
1/2 cup (125 mL) Chopped mint leaves
1 (400 g) Package Maple Leaf Prime Naturally® Fully Cooked Chicken Strips
1 cup (250 mL) Matchstick carrots
1 cup (250 mL) Bean sprouts
1/2 cup (125 mL) Thinly sliced cucumbers
1/2 cup (125 mL) Thinly sliced radishes
3/4 cup (175 mL) Crumbled Feta cheese (optional)
Sesame vinaigrette for serving


HEAT a small skillet over medium-high. Add pumpkin seeds and cook for 2-3 minutes or until lightly toasted. Set aside to cool.

ASSEMBLE salad by tossing lettuce and mint together in a large salad bowl. Arrange chicken, carrots, bean sprouts, cucumbers, radishes, Feta cheese (if using) and pumpkin seeds artfully over top. Drizzle with sesame vinaigrette; toss and enjoy!


Substitute chopped peanuts for toasted pumpkin seeds.
