|1 cup||shaved parmesan|
|1 cup||arugula or baby greens|
|4||slices of multigrain artisan style bread|
|2 tbsp||olive oil|
|1 cup||cherry tomatoes|
|2 tbsp||good quality olive oil|
|1 tbsp||of basil|
Heat a large skillet over medium high heat, melt butter and fry eggs until just set over medium. Remove from heat and keep warm. Lightly toast bread. Top with parmesan, followed by prosciutto and then arugula. Top sandwich with second piece of bread. Top with egg and charred tomato and sprinkle with basil. Drizzle with olive oil and serve.
