A great receipe
|125 ml||dried apricots|
|30 ml||brown sugar|
|5 ml||balsamic vinegar|
|5 ml||fresh rosemary, minced or|
|6 ml||dried rosemary, crushed|
|8 oz||wheel of brie, at room temperature|
In a small saucepan, combine the apricots, brown sugar, water, vinegar and salt. Bring to a boil. Reduce heat to medium, cook and stir until thickened. Remove from heat; Stir in the rosemary.
Heat oven to 400°F. Remove rind from the top of cheese. Place in an un-greased ovenproof serving dish. Spread apricot mixture over cheese. Bake, uncovered, for
10 to12 minutes or until cheese is softened.
Serve immediately or hold at room temperature for up to 2 hours. Yield: 6 to 8 servings
